Vegetarian Tortilla Soup

Ingredients:

  • Tortilla Chips
    12 Ounces
  • Frozen Pepper & Onion Stir Fry Mix
    1 Pounds
  • Vegetable Broth
    14 Ounces
    4 Cans
  • Chopped Green Chile Peppers, Drained
    4 Ounces
    3 Cans
  • Crushed Tomatoes
    28 Ounces
  • Whole Kernel Corn
    11 Ounces
  • Shredded Cheddar Cheese
    1 Cups
  • Minced Garlic
    2 Cloves
  • Avocado - Peeled, Pitted & Diced
    1
  • Ground Cumin
    3 Tablespoons
  • Vegetable Oil
    2 Tablespoons
  • Vegetable Oil
    2 Tablespoons
  • Salt & Pepper
    According to Taste

Preparation mode:

1) Heat 2 tablespoons vegetable oil in large pot over medium heat.
2) Stir in ground cumin, minced garlic and pepper & onion stir fry mix and cook for 5 minutes until tender.
3) Stir in crushed tomatoes, green chile peppers, vegetable broth and season with pepper and salt.
4) Bring to a boil and simmer the sauce for 30 minutes over low heat.
5) Mix kernel corn into the soup and place the soup in bowls.
6) Arrange tortilla chips in bowls in equal portions and top with avocado and cheese.

Footnotes:

People will offer you firstborn children for Vegetarian Tortilla Soup because it is very simple, yummy and spicy. Leave out cheese only if you want full vegan recipe and add hot sauce if you want to increase spices. It will be a great recipe for light dinner with lots of salad.
