Ingredients:
- Tortilla Chips12 Ounces
- Frozen Pepper & Onion Stir Fry Mix1 Pounds
- Vegetable Broth14 Ounces4 Cans
- Chopped Green Chile Peppers, Drained4 Ounces3 Cans
- Crushed Tomatoes28 Ounces
- Whole Kernel Corn11 Ounces
- Shredded Cheddar Cheese1 Cups
- Minced Garlic2 Cloves
- Avocado - Peeled, Pitted & Diced1
- Ground Cumin3 Tablespoons
- Vegetable Oil2 Tablespoons
- Vegetable Oil2 Tablespoons
- Salt & PepperAccording to Taste
Preparation mode:
1) Heat 2 tablespoons vegetable oil in large pot over medium heat.
2) Stir in ground cumin, minced garlic and pepper & onion stir fry mix and cook for 5 minutes until tender.
3) Stir in crushed tomatoes, green chile peppers, vegetable broth and season with pepper and salt.
4) Bring to a boil and simmer the sauce for 30 minutes over low heat.
5) Mix kernel corn into the soup and place the soup in bowls.
6) Arrange tortilla chips in bowls in equal portions and top with avocado and cheese.

Footnotes:
People will offer you firstborn children for
Vegetarian Tortilla Soup because it is very simple, yummy and spicy.
Leave out cheese only if you want full vegan recipe and add hot sauce if
you want to increase spices. It will be a great recipe for light dinner
with lots of salad.
