Ingredients:
- Olive Oil4 Tablespoons
- Baking Potatoes2Sliced

- Red Bell Pepper1/2Chopped

- Parsley sprigs for garnishing
- Tomatoes1Chopped

- Cod Fish Fillets1 Pounds
Preparation mode:
Steps to make Baked Fish Dinner Recipe:
1) Slightly grease a baking dish and heat the baking oven upto the 225 degree Celsius mark.
2) Take a bowl and mix a couple tablespoons of olive oil with potatoes.
3) Add salt and ground black pepper to taste. Season the potatoes well.
4) Transfer the potatoes to the greased baking dish and fill the dish with 1 quarter cup water.
5) Cover the dish and bake the potatoes for about 15 minutes time.
6) Take a bowl and mix celery, zucchini, leek, red bell pepper and black pepper.
7) Add olive oil and garlic to the boil. Toss thoroughly.
8) Mix in salt to taste. Top this mixture over the baking dish potatoes and fill the dish with 1 more quarter of water.
9) Cover the dish once again and bake for 12 minutes time.
10) Slice the fish into bite sized pieces and top over the baked vegetables mixture.
11) Bake for 12 more minutes or until the fish is tender.
12) Garnish with parsley and tomato before serving!
