- Vegetable Oil1 Tablespoons
- Chicken Breast Meat1 PoundsBoneless and Bite Sized Pieces
- Baby Spinach Leaves4 Cups
- Minute White Rice1.5 CupsUncooked
- Cherry Tomatoes1 CupsHalved
- Canned Chicken Broth11 Ounces
- Water1/2 Cups
- Parmesan Cheese1/4 CupsGrated

Steps to make Chicken Spinach Risotto Recipe:
1) Heat up oil in a skillet over moderate flame.
2) Once the oil is heated enough, add in the chicken and stir fry for 8 to 10 minutes or until chicken is cooked.
3) Add tomatoes, broth, water and spinach.
4) Stir well and heat through for 2 minutes.
5) Add in the rice. Stir heavily and toss the rice well enough with everything.
6) Turn the flame down to low and cover the skillet. Leave to cook for about 5 minutes time.
7) Mix in grated Parmesan Cheese and serve hot!
