Orange Roughy with Sherry Recipe

Ingredients:

  • Butter
    2 Tablespoons
  • All Purpose Flour
    2 Tablespoons
  • Chicken Broth
    1/2 Cups
  • Sherry
    1/2 Cups
  • Fresh Chives
    2 Tablespoons
    Chopped
  • Basil
    1/2 Teaspoons
  • Thyme
    1/2 Teaspoons
  • Salt and Pepper
    To Taste
  • Tomatoes
    3
    Peeled, Sliced
  • Orange Roughy Fillets
    8 of 4 ounce each

Preparation mode:

Steps to make Orange Roughy with Sherry Recipe:
1) Prepare the baking oven up to the 155 degree Celsius mark and slightly oil a baking dish.
2) Heat up butter in a non stick skillet over moderate flame.
3) Mix in flour. Stir until the flour blends well with the butter.
4) Now mix in chicken broth, not all at once, but bit by bit. Stir well until bubbly.
5) Add basil, thyme and chives. Mix well and turn off the flame.
6) Set up the orange roughy fillets on the greased baking dish.
7) Coat with salt and pepper to taste and then top with tomato slices.
8) Cover the fillets with the cooked cream mixture.
9) Bake for half an hour in the preheated oven or until the fish is easily flakable with a fork.

A very fit and fine fish meal to have, this Orange Roughy with Sherry Recipe. Orange Roughy comes coated and covered in a creamy mixture of sherry and herb sauce. Serve with your favorite side dish to make a wonderful fish meal out of this. Id like serving this with blanched veggies or baked potatoes!
