Ingredients:
- Shredded Monterey Jack Cheese2 Cups
- Light Sour Cream1 Cups
- Green Salsa7 Ounces
- Corn Tortillas10 Ounces
- Fresh Spinach1 BunchRinsed & Sliced
Preparation mode:
1) Preheat the oven up to 175 Degrees C (350 Degrees F) and stir together green salsa and 1/2 cup sour cream in a small bowl.
2) Coat the bottom of 9*13 baking dish with mixture and spread salsa and sour cream on every tortilla.
3) Lay spinach over mixture and sprinkle handful amount of cheese. Roll up and place in the baking dish.
4) Pour the remaining cheese and salsa when all the tortillas are in the baking dish.
5) Bake enchiladas in the preheated oven for 20 to 25 Minutes until heated through and browned.

meatless dish that you can prepare easily in quick time. It is a superb
recipe for vegetarians and also for those who don’t like meal without
meat. If you like light version of the recipe then replace yogurt with
source cream.
