Scallops with Pepper and Onions Recipe

Ingredients:

  • Olive Oil
    1/3 Cups
  • Canned Anchovy Fillets
    2 Ounces
    Chopped
  • Sea Scallops
    1 Pounds
  • Red Bell Pepper
    1
    Chopped
  • Orange Bell Pepper
    1
    Chopped
  • Red Onion
    1
    Chopped
  • Garlic
    2 Cloves
    Slicec
  • Lime Zest
    1 Teaspoons
    Chopped
  • Lemon Zest
    1.5 Teaspoons
    Chopped
  • Salt and Pepper
    To Taste
  • Parsley for garnishing
    8 sprigs

Preparation mode:

Steps to make Scallops with Peppers and Onions Recipe:
1) Heat up olive oil in a skillet over moderate high flame.
2) Ad in the anchovies and stir fry for a couple minutes.
3) Once the anchovies start to sizzle, add in the scallops. Stir fry for a couple minutes.
4) Take a bowl and mix together orange bell pepper, red bell pepper, garlic, onion, lime and lemon zests.
5) Sprinkle salt and pepper into the bowl and toss thoroughly.
6) Add the bowl mixture to the skillet and fry with the scallops for 3 minutes.
7) Stir thoroughly and turn the scallops. Cook for a few more minutes.
