Salmon and Pesto with Rice Recipe

Ingredients:

  • Dry White Wine
    2/3 Cups
  • Fish Stock
    2.5 Cups
  • White Rice
    1 Cups
  • Shallots
    2
    Chopped
  • Butter
    2 Tablespoons
  • Pesto Sauce
    1/3 Cups
  • Salmon Fillets
    1.5 Pounds
    Cubed

Preparation mode:

Steps to make Salmon and Pesto with Rice Recipe:
1) Take a bowl and add pesto sauce to it.
2) Add the Salmon fillets into the bowl and coat readily with the pesto.
3) Heat up a non stick skillet over moderate flame and melt butter in it.
4) Add in the Shallots and fry until soft.
5) Pour in wine, fish stock and rice. Mix and toss well. Bring to a boil.
6) Turn the flame down to moderate low and leave to cook for for about 15 minutes time.
7) Do not stir at this point. Add the Salmon into the skillet and cover.
8) Cook for half an hour or until the rice and Salmon are both soft.
