Preparation mode:
1) Prepare the outdoor grill and heat it up to moderate high heat.
2) Make large wholes in the eggplant and cook it on the preheated grill.
Note: Keep turning the eggplant during the grilling process, dont give more than 15 minutes overall.
3) Set the grilled eggplant aside and leave to let cool.
4) Discard the eggplant skin and dice up the pulp.
5) In a mixing bowl, toss together onion, parsley, tomato and diced eggpant.
6) Pour in olive oil, vinegar and add feta cheese. Mix and toss thoroughly.
7) Place the bowl in the refrigerator. Refrigerate for some time and mix in salt to taste before serving!
