Ingredients:
- Vegetable Oil2 Tablespoons
- Japanese Eggplants41 inch pieces
- Vegetable Oil2 Tablespoons
- Onions2Sliced
- Garlic1 Tablespoons
- Soy Sauce2 Tablespoons
- Water2 Tablespoons
- Oyster Sauce1.5 Tablespoons
- Chili Garlic Sauce1 Tablespoons
- White Sugar1 Teaspoons
- Black PepperTo Taste
- Sesame Oil1/2 Teaspoons
Preparation mode:
1) Heat up oil in a skillet over high flame.
2) Once the oil starts smoking, add in the eggplant cubes and stir fry until brown.
3) Use large forks to take the eggplant out of the skillet, leaving behind the grease.
4) Add a couple tablespoons oil to the same skillet over high flame.
5) Add onions and stir fry for half a minute. Add garlic and stir fry for half a minute.
6) Pour in oyster sauce, soy sauce, chili garlic sauce, sugar, and water.
7) Sprinkle ground black pepper to taste and mix readily throughout.
8) Add the fried eggplant back into the skillet and coat thoroughly with the whole mixture.
9) TUrn the flame down to low and bring the mixture to a simmmer, this should take about 5 minutes time.
