Ingredients:
- Canola Oil1 Tablespoons
- Chorizo Sausage1/4 PoundsChopped
- Ham1/3 PoundsPre Cooked
- Onion1Chopped
- Garlic2 ClovesChopped
- Sweet Potatoes2Peeled and Diced
- Red Bell Pepper1Diced
- Canned Tomatoes with Juice30 OuncesDiced
- Green Chile Pepper1Diced
- Water1.5 Cups
- Canned Black Beans32 Ounces
- Mango1Peeled and Diced
- Cilantro1/4 CupsChopped
- SaltTo Taste
Preparation mode:
1) Heat up oil in a skillet over moderate flame. Fry the chorizo in it for a minute.
2) Add ham to the chorizo and stir fry for a couple minute time.
3) Throw in the onion and stir fry with the chorizo and ham until soft and tender.
4) Add garlic and fry until it turns soft.
5) Add tomatoes with juice, bell pepper, sweet potatoes, water and chile pepper.
6) Stir thoroughly and bring the mixture to a boil.
7) Turn the flame down to low and cover the skillet. Leave to cook for 15 minutes time or until the potatoes are done.
8) Add beans to the skillet and cover the skillet. Cook until the beans have been warmed through.
9) Stir in mango and cilantro. Seaon with salt to taste and serve!
