Brazilian Black Bean Stew Recipe

Ingredients:

  • Canola Oil
    1 Tablespoons
  • Chorizo Sausage
    1/4 Pounds
    Chopped
  • Ham
    1/3 Pounds
    Pre Cooked
  • Onion
    1
    Chopped
  • Garlic
    2 Cloves
    Chopped
  • Sweet Potatoes
    2
    Peeled and Diced
  • Red Bell Pepper
    1
    Diced
  • Canned Tomatoes with Juice
    30 Ounces
    Diced
  • Green Chile Pepper
    1
    Diced
  • Water
    1.5 Cups
  • Canned Black Beans
    32 Ounces
  • Mango
    1
    Peeled and Diced
  • Cilantro
    1/4 Cups
    Chopped
  • Salt
    To Taste

Preparation mode:

1) Heat up oil in a skillet over moderate flame. Fry the chorizo in it for a minute.
2) Add ham to the chorizo and stir fry for a couple minute time.
3) Throw in the onion and stir fry with the chorizo and ham until soft and tender.
4) Add garlic and fry until it turns soft.
5) Add tomatoes with juice, bell pepper, sweet potatoes, water and chile pepper.
6) Stir thoroughly and bring the mixture to a boil.
7) Turn the flame down to low and cover the skillet. Leave to cook for 15 minutes time or until the potatoes are done.
8) Add beans to the skillet and cover the skillet. Cook until the beans have been warmed through.
9) Stir in mango and cilantro. Seaon with salt to taste and serve!

A super versatile and all season dish, this Brazilian Black Bean Stew Recipe. If you're a vegetarian, dont hesitate to leave out the meat, as it wont effect the dish. An amazing veggie meal that tastes stunning and is easy to make. Serve hot and fresh with toasted bread and a salad or your choice!
