Tofu Peanut Stir Fry Recipe

Ingredients:

  • Vegetable Oil
    1 Teaspoons
  • Frozen Stir Fry Vegetables
    16 Ounces
  • Ginger
    1/2 Teaspoons
    Chopped
  • Salt
    To Taste
  • Black Pepper
    To Taste
  • Eggs
    2
  • Cornstarch
    1 Cups
  • Firm Tofu
    14 Ounces
  • Vegetable Oil
    1/2 Cups
  • Peanut Sauce
    3/4 Cups
  • Peanuts
    1/4 Cups
    Chopped

Preparation mode:

1) Heat up oil in a skillet over moderate flame.
2) Add the packed frozen stir fry vegetables and fry them until soft.
3) Add ginger, and season with salt and ground black pepper to taste. Mix well.
4) Set the fried vegetables mixture aside.
5) Beat eggs in a mixing bowl and sprinkle salt and pepper. Mix well.
6) Add in cornstarch and whisk the whole mixture thoroughly.
7) Now dip the tofu cubes in the egg mixture and then in the cornstarch mixture, making sure you coat well.
8) Heat up some more oil in the skillet over moderate flame and fry the coated tofu. Fry until evenly brown.
9) Pour in the peanut sauce and add peanuts. Stir fry for a few minutes or until heated through.
10) Add the fried vegetables and toss both mixtures together. Heat through and serve.

For first timer tofu eaters, this Tofu Peanut Stir Fry Recipe is one of the most delightful dishes to have. The tofu is immensely crispy. A brilliant alternative to have in place of chicken or beef stir fry dishes. Even my kids are huge fans of this. Serve over hot Asian noodles or hot white boiled rice.
