Italian Wedding Soup Recipe

Ingredients:

  • Lean Beef
    1 Pounds
    Minced
  • Eggs
    2
    Beaten
  • Bread Crumbs
    1/4 Cups
  • Parmesan Cheese
    2 Tablespoons
    Grated
  • Basil
    1 Teaspoons
  • Onion
    3 Tablespoons
    Chopped
  • Chicken Broth
    2.5 Quarts
  • Seashell Pasta
    1 Cups
  • Carrots
    3/4 Cups
    Diced
  • Spinach
    2 Cups
    Sliced

Preparation mode:

1) Take a bowl and whisk together cheese, egg, bread crumbs, onion and basil.
2) Add beef to the mixture and mix thoroughly throughout.
3) Using both your hands, make ball shapes out of the mixture and leave aside.
4) Heat up chicken broth in a saucepan over high flame and bring to a boil.
5) Turn the flame down to moderate and add pasta, carrot and spinach.
6) Add in the meatballs you prepared earlier. Being the mixture to a boil once again, stirring regularly.
7) Once done the meatballs should be cooked well, through and through and the pasta should be tender. Serve garnished with grated Parmesan Cheese.

I adapted this delicious Italian Wedding Soup Recipe from a wedding of one of my Italian colleagues. The flavors are sure to turn every single person into a fan. A brillaint soup dish that goes stunning if served hot with garnished grated Parmesan Cheese. Try serving with toasted french bread for the best combination!
