Ingredients:
- Orange1Peeled and sliced
- Canned Pineapple1/2 CupsChunks
- Mango1/4 CupsDiced
- Jalapeno Peppers2Chopped
- Orange Juice3 Tablespoons
- Red Bell Pepper1 TablespoonsDiced
- White Sugar2 Teaspoons
- Cilantro1 TablespoonsChopped
- Orange Juice1/2 Cups
- Olive Oil1 Tablespoons
- Cayenne Pepper1/4 Teaspoons
- Pineapple Juice1 Tablespoons
- Swordfish Steaks1.5 Pounds
Preparation mode:
1) For the Lemon salsa sauce, take a bowl and mix together oranges,
pinapple chunks, jalapenos, mango, orange juice, sugar, cilantro and
red bell peppr.
2) Mix and toss all ingredients thoroughly and keep covered in the refrigerator.
3) In another bowl whisk together half a cup orange juice, olive oil, pineapple juice and cayenne pepper.
4) Dip the swordfish in the bowl and coat thoroughly. Leave to marinate for half an hour atleast.
5) Heat up the grill for moderate high heat and slightly grease the grill grate.
6) Place the marinated sword fish on the hot grate and grill for about 7 minutes time.
7) Turn the fish and baste with more marinade. Grill for 7 more minutes.
8) Serve the grilled swordfish with the prepared Citrus Salsa.
