Peanut Butter Vegetable Chicken Soup Recipe

Ingredients:

  • Chicken Broth
    8 Cups
  • Boneless Chicken
    2 Cups
    Diced
  • Potatoes
    1 Cups
    Peeled and Cubed
  • Carrots
    1 Cups
    Diced
  • Zicchini
    1 Cups
    Diced
  • Broccoli
    1 Cups
    Florets
  • Canned Tomatoes
    1 Cups
    Chopped
  • Celery
    1/2 Cups
    Chopped
  • Onion
    1/2 Cups
    Chopped
  • Green Bell Pepper
    1/2 Cups
    Chopped
  • Garlic
    2 Cloves
    Chopped
  • Peanut Butter
    1/2 Cups
  • Parsley
    1 Tablespoons
    Chopped
  • Salt and Pepper
    To Taste

Preparation mode:

1) Take a large boiling pan and mix together potatoes, chicken, carrots and broth.
2) Mix and toss well. Bring the mixture to a boil over high flame.
3) Turn the flame down to moderate and leave the mixture to cook for about 10 minutes.
4) Once the vegetables are soft, add tomatoes, celery, broccoli, zucchini, onion, garlic and green pepper.
5) Cook for about 10 more minutes, stirring frequently.
6) Add parsley, peanut butter and sprinkle salt and ground black pepper to taste. Heat through for a few minutes and serve!
