Ingredients:
- Chicken Broth8 Cups
- Boneless Chicken2 CupsDiced
- Potatoes1 CupsPeeled and Cubed
- Carrots1 CupsDiced
- Zicchini1 CupsDiced
- Broccoli1 CupsFlorets
- Canned Tomatoes1 CupsChopped
- Celery1/2 CupsChopped
- Onion1/2 CupsChopped
- Green Bell Pepper1/2 CupsChopped
- Garlic2 ClovesChopped
- Peanut Butter1/2 Cups
- Parsley1 TablespoonsChopped
- Salt and PepperTo Taste
Preparation mode:
1) Take a large boiling pan and mix together potatoes, chicken, carrots and broth.
2) Mix and toss well. Bring the mixture to a boil over high flame.
3) Turn the flame down to moderate and leave the mixture to cook for about 10 minutes.
4) Once the vegetables are soft, add tomatoes, celery, broccoli, zucchini, onion, garlic and green pepper.
5) Cook for about 10 more minutes, stirring frequently.
6) Add parsley, peanut butter and sprinkle salt and ground black pepper to taste. Heat through for a few minutes and serve!
