Ingredients:
- Fettuccine Pasta8 Ounces
- Oregano3 Tablespoons
- Sweet Onion WedgesOf 1/2 Sweet Onion
- Garlic3 ClovesChopped
- Olive Oil4 Tablespoons
- Tomatoes4Chopped
- Mozzarella Cheese9 OuncesDiced
- Shrimp1 PoundsPeeled, Deveined and Cooked
- Spinach Leaves1 Cups
- Salt and PepperTo Taste
- Basil3 TablespoonsChopped
Preparation mode:
1) Fill a stock pot with water and bring to a boil over high flame.
2) Turn the flame down to moderate and add in the pasta. Boil for about 12 minutes time over moderate flame. Drain and leave aside to let cool.
3) Add onion, oregano and garlic to a food blender. Blend well until readily chopped. ( About half a minute )
4) Heat up olive oil in a skillet over moderate flame. Add the blended mixture and stir fry until just golden.
5) Add in tomatoes and basil. Season with salt and ground black pepper to taste.
6) Stir fry and cook for about 5 minutes time.
7) Add in the spinach and toss fry it over moderate flame for about 5 minutes with the rest of the ingredients.
8) Add the shrimp and the pasta. Toss readily and heat through. Mix in Mozzarella Cheese and serve hot!
