African Sweet Potato and Peanut Soup Recipe

Ingredients:

  • Chopped Sweet Potatoes
    3/4 Kilograms
  • Chopped Dry-Roasted Peanuts
    1/4
  • Water
    4 1/2
  • Minched Ginger Root
    2
  • Creamy Peanut Butter
    2
  • Vegetable Oil
    1
  • Salt
    1
  • Ground Cumin
    1 1/2
  • Ground Coriander
    1 1/2
  • Ground Cinamon
    1/2
  • Minched Garlic
    2
  • Chopped Cilantro
    1
    Bunch
  • Cayenne Pepper
    1
    Pinch
  • Ground Cloves
    1
    Pinch
  • Chopped Onion
    1
    Medium
  • Chopped Tomatoes
    3
    Medium
  • Chopped Carrot
    1
    Medium

Preparation mode:

1) In a large saucepan heat vegetable oil over medium heat and cook onion in it for 10 minutes until gets lightly brown.
2) Stir in cloves, garlic, cinnamon, ginger, cumin, coriander, sweet potatoes, tomatoes, carrot and cook for 5 minutes.
3) Pour water in saucepan and sprinkle salt over the mixture and boil. Simmer it 30 minutes over low heat.
4) After removing the soup mixture from heat blend peanuts and mixture in blender until it gets smooth. Sprinkle cayenne pepper into it and return the mixture to saucepan.
5) Mix peanut butter and cook again until it heated through.
6) Serve the soup with cilantro and enjoy.

Combination of sweet potatoes, tomatoes, peanuts, peanut butter and vegetable oil make a great soup recipe. Adding extra cayenne pepper will make it spicy as well.
